Which beans to use for bean broth?

When making simple bean broth for 100 people, it's worth thinking about which beans to use, as this will have an impact on the price. The beans used in the broth vary a little depending on the region of Brazil, but it is more common to use the carioquinha beans (also called carioca beans or mulatinho beans) or, in some cases, black beans. Check out the differences of both beans:

According to the Brazilian Food Composition Table1, carioca beans are considered healthier than black beans because they contain more protein, fiber, iron and potassium. It also contains less carbohydrate than black beans;

The price of raw carioca beans is around R$ 3 and R$ 4 per kilo2 (depending on the region of Brazil), practically the same as black beans. To save money, it is worth using string beans and white beans, which are cheaper options.
